Chocolate Honey Cake

- 2 eggs
- 1 cup vegetable oil
- 3/4 cup honey
- 1 cup sugar
- 1 tbsp marmalade
- 1 tsp vanilla essence
- pinch salt
- 2 tbsp cocoa powder mixed with 2-3 tbsp boiling water and cooled
- 1 cup self-raising flour
- 1 cup plain flour
- 1 tsp ground cinnamon
- 1/2 tsp mixed spice
- 1 tsp ground ginger
- 1 tsp instant coffee powder
- 1/2 tsp bicarb soda
- 1 cup boiling water
- Preheat oven to 150°C.
- Grease a 23cm cake tin and line with baking paper.
- Mix together eggs, oil, honey, sugar, marmalade, vanilla and cocoa paste.
- Sift or mix together flours, spices, salt and coffee powder.
- Add to wet mixture, stir well. It will be very thick.
- Dissolve bicarb soda in boiling water. Add carefully and mix well.
- Pour into tin (don’t worry if it looks runny).
- Bake in the centre of the oven for approx. 50 minutes or until a toothpick inserted in the centre comes out clean.Allow to cool completely before storing.
