Chocolate Honey Cake

  • 2 eggs
  • 1 cup vegetable oil
  • 3/4 cup honey
  • 1 cup sugar
  • 1 tbsp marmalade
  • 1 tsp vanilla essence
  • pinch salt
  • 2 tbsp cocoa powder mixed with 2-3 tbsp boiling water and cooled
  • 1 cup self-raising flour
  • 1 cup plain flour
  • 1 tsp ground cinnamon
  • 1/2 tsp mixed spice
  • 1 tsp ground ginger
  • 1 tsp instant coffee powder
  • 1/2 tsp bicarb soda
  • 1 cup boiling water
  1. Preheat oven to 150°C.
  2. Grease a 23cm cake tin and line with baking paper.
  3. Mix together eggs, oil, honey, sugar, marmalade, vanilla and cocoa paste.
  4. Sift or mix together flours, spices, salt and coffee powder.
  5. Add to wet mixture, stir well. It will be very thick.
  6. Dissolve bicarb soda in boiling water. Add carefully and mix well.
  7. Pour into tin (don’t worry if it looks runny).
  8. Bake in the centre of the oven for approx. 50 minutes or until a toothpick inserted in the centre comes out clean.Allow to cool completely before storing.
