Honey Lemon Drumettes

  • 2 tbsp honey
  • 1 tbsp chopped thyme, plus extra to serve
  • 1/4 cup extra virgin olive oil
  • 1 tbsp finely grated lemon zest
  • 1/3 cup lemon juice
  • 1kg chicken drumettes
  • sea salt to taste
  1. Warm honey slightly on stove, mix together with thyme, olive oil, lemon zest and juice.
  2. Add chicken and marinate for at least 30 minutes.
  3. Preheat fan forced oven to 200°C.
  4. Place allthe chicken and sauce in a shallow oven-proof dish and bake for 30-40 minutes or until nicely browned.
  5. Carefully turn each piece and cook for a further 30 minutes until browned.
  6. Sprinkle with extra thyme and serve.
