Honey Lemon Drumettes

- 2 tbsp honey
- 1 tbsp chopped thyme, plus extra to serve
- 1/4 cup extra virgin olive oil
- 1 tbsp finely grated lemon zest
- 1/3 cup lemon juice
- 1kg chicken drumettes
- sea salt to taste
- Warm honey slightly on stove, mix together with thyme, olive oil, lemon zest and juice.
- Add chicken and marinate for at least 30 minutes.
- Preheat fan forced oven to 200°C.
- Place allthe chicken and sauce in a shallow oven-proof dish and bake for 30-40 minutes or until nicely browned.
- Carefully turn each piece and cook for a further 30 minutes until browned.
- Sprinkle with extra thyme and serve.
